Cream pudding with cherry compote

Ingredients

  • 1 glass (720 ml; extract weight: 460 g) Sour cherries
  • 1 TABLESPOON Cornstarch
  • 4 TABLESPOONS Sugar
  • 2 Eggs
  • 1/2 l Milk
  • 1 package Cream-flavoured pudding powder
  • 25 g Almond slivers
  • 7-10 Tbsp Lemon balm

Directions

    Drain the cherries and collect the juice. Stir 3 tablespoons cherry juice and starch until smooth. Boil up the rest of the cherry juice and 2 tablespoons of sugar. Stir in the starch and bring to the boil again.

    Add the cherries and let the compote cool. Separate eggs. Mix the egg yolks and 4 tablespoons of milk. Stir the pudding powder into it until smooth. Boil up the rest of the milk and sugar in a pot.

    Remove from the heat and stir in the mixed pudding powder. Bring to the boil again and allow to cool slightly. Beat the egg whites until stiff and fold into the pudding. Pour into dessert glasses and chill.

    Roast almond slivers in a pan without fat until golden brown. Arrange the pudding with cherry compote and serve sprinkled with almond slivers. Decorate as desired with lemon balm.
