Ingredients

Servings: 4
  • 1 kg new potatoes
  • 1 Onion
  • 1 Garlic clove
  • 125 g Gherkins (from the jar)
  • 200 g Edible quark (20 % fat in dry matter)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 250 g Spring onions
  • 200 g Mettwurst in one piece
  • 30 g clarified butter
  • 7-10 Tbsp Tomato and parsley

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. In the meantime peel onion and garlic. Chop the onion finely, press the garlic through a garlic press. Drain the gherkins and grate them coarsely. Stir curd cheese, grated gherkins, onions, garlic and approx. 7 tablespoons of gherkin water until smooth. Season with salt and pepper. Clean and wash spring onions and cut them into pieces of about 3 cm.

    Cut the sausage into cubes. Drain the potatoes, rinse with cold water and peel off the skin. Halve potatoes lengthwise. Heat some clarified butter in a large pan, sauté spring onions and sausage briefly and remove. Put the rest of the clarified butter and the potatoes into the pan and fry until golden brown. Finally, add the spring onions and sausage and season with salt and pepper. Garnish with tomato and parsley and serve with Tsa-Tsiki
