Potato pan with meat loaf and fried egg

Ingredients

Servings: 4
  • 1 collar spring onions (approx. 200 g)
  • 750 g small waxy potatoes
  • 200 g Meatloaf
  • 3-4 Tbsp Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5 Stem(s) Thyme
  • 75 g dried tomatoes in oil
  • 15 g Butter or margarine
  • 4 Eggs (size M)

Directions

    Clean, wash and chop the spring onions. Peel, wash and quarter the potatoes. Cut meatloaf into pieces. Heat oil in a pan and sauté spring onions. Add meat loaf and fry for about 5 minutes. Take out. Fry the potatoes in the frying fat for approx. 20 minutes, turning from time to time.

    Season with salt and pepper. Meanwhile, remove the thyme leaves from the stalks, wash, dab dry and chop finely. Drain dried tomatoes and cut into strips. Fold in spring onions, meat loaf and dried tomatoes and let warm up. Heat the fat in a pan and fry the fried eggs. Place the eggs on the potato and meat loaf pan. Season with salt, pepper and thyme
