Cordon-bleu meatballs with green beans and mashed potatoes

Ingredients

Servings: 4
  • 1 small onion
  • 3 Stem(s) Thyme
  • 250 g Mett
  • 250 g Minced pork
  • 1 egg (size M)
  • 30 g Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 (approx. 40 g) large slice of cooked ham, thinly sliced
  • 4 cubes (approx. 40 g) Gouda cheese
  • 750 g kidney beans
  • 1 kg Potatoes, mainly waxy
  • 2 TABLESPOONS Oil
  • 30 g Roasted onions
  • 40 g soft butter
  • 1/2 bunch Parsley
  • 200-250 ml Milk
  • 7-10 Tbsp grated nutmeg

Directions

    Peel and finely chop the onion. Wash the thyme, shake dry and remove the leaves. Put ground pork fat, minced meat, egg, breadcrumbs, onion, thyme, 1/2 tsp salt and some pepper in a bowl and knead.

    Quarter the ham slice. Wrap each cheese cube in 1/4 slice of ham. Quarter the minced meat mass, form each into a flat cake, wrap each ham packet in it, form into meatballs. Put them in a cold place.

    Clean, wash and drain the beans. Wash and peel the potatoes, cut them into pieces, cover them and cook them in little boiling salted water for about 20 minutes. Steam beans covered in little boiling salted water for about 15 minutes.

    Heat the oil in a pan. Fry the meatballs in it at medium heat while turning for about 10 minutes. Pour in approx. 125 ml water and braise covered for approx. 10 minutes.

    Mix the fried onions with the soft butter. Wash the parsley, shake dry, pluck off the leaves and chop, except for a little bit for garnishing. Warm up the milk. Drain potatoes, add hot milk and mash.

    Season to taste with salt and nutmeg. Drain beans, add parsley and toss. Keep warm.

    Remove the lid from the pan and fry the meatballs for 4-5 minutes while turning them until crispy. Remove the meatballs and keep them warm. Heat the fried onion butter in the hot pan. Arrange mashed potatoes, beans and meatballs on plates.

    Spread roasted onion butter over it, garnish with parsley.
