Spicy Cheddar meatballs with potato wedges

Ingredients

Servings: 4
  • 2 Onions
  • 3-4 Tbsp Oil
  • 1 can(s) (425 ml) chunky tomatoes
  • 2 TABLESPOONS Barbecue sauce
  • 2 TABLESPOONS fruit or apple vinegar
  • 7-10 Tbsp Salt, cayenne pepper, sugar,
  • 7-10 Tbsp Pepper
  • 1 kg floury potatoes
  • 100 g Parmesan (piece)
  • 7-10 Tbsp 1 1⁄2-2 Tbsp Jalapeños (see page 18)
  • 100 g Cheddar cheese (piece)
  • 600 g mixed mince
  • 5 TABLESPOONS Breadcrumbs
  • 1 Egg
  • baking paper

Directions

    For the BBQ sauce, peel the onions and dice them very finely. Heat 1 tablespoon of oil. Fry half of the onions in it. Add the tomatoes, bring to the boil and simmer for about 10 minutes. Season to taste with barbecue sauce, vinegar, salt, cayenne pepper and 1 tbsp. sugar.

    Keep warm or let it cool down and eat it cold.

    For the potato corners, preheat the oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Line baking tray with baking paper. Peel and wash the potatoes and cut them into slices. Season with salt and spread flat on the tray.

    Bake in a hot oven for about 40 minutes until golden brown. Turn over in between. Grate the Parmesan finely and sprinkle over the potatoes about 15 minutes before the end of the baking time.

    For the meatballs, drain the jalapeños and chop finely. Grate the cheddar and mix both. Knead minced meat, remaining onion cubes, breadcrumbs, 4 tbsp. water and egg to a minced dough, season with 1 level tsp. salt and 1⁄2 tsp. pepper.

    Form into 4 large meatballs, filling each with 1⁄4 cheese mix. Heat 2-3 tablespoons of oil in a frying pan. Fry the meatballs for 5-6 minutes on each side. In the last 8-10 minutes of the potato baking time, place the meatballs on the baking tray and fry until done.

    Serve with potato wedges and BBQ sauce.
