Mashed Potato Snowman

Ingredients

  • 1 small bunch of carrots
  • 1 collar Spring onions
  • 1 kg floury potatoes
  • 7-10 Tbsp salt, pepper, sugar, nutmeg
  • 1 small onion
  • 400 g mixed mince
  • 1 TABLESPOON Tomato paste
  • 1 egg, 2 tablespoons breadcrumbs
  • 3 TABLESPOONS Oil
  • 3 TABLESPOONS butter, 100 ml milk
  • 16 Allspice seeds

Directions

    Peel and wash the potatoes. Cover and cook in salted water for about 20 minutes. Meanwhile peel the onion for the meatballs. Finely dice onion and any remaining white spring onion ends. Knead with minced meat, tomato paste, egg, breadcrumbs, 1⁄2 tsp. salt and a little pepper.

    Form into 4 flat meatballs and fry in 2 tablespoons of hot oil for 4-5 minutes on each side.

    Heat 1 tablespoon of oil in a saucepan and sauté the carrot cubes in it. Season with salt and sugar. Add 100 ml water, bring to the boil and cook for about 5 minutes. Shortly before the end of the cooking time stir in spring onion rings.

    Add the green spring onion, then cut lengthwise into 4 strips.

    Drain the potatoes and let them evaporate. Add butter and milk, mash everything to a firm purée. Season to taste with salt and nutmeg. Divide the carrot vegetables into four plates. Put the meatballs on top. Using an ice-cream scoop or tablespoons, cut 4 large and 4 small balls of puree.

    As snowmen on the meatballs. Press in the allspice seeds as eyes and buttons. Stick carrot tips into the heads as noses. Put strips of spring onions as scarves around the snowmen. Stick white ends of spring onions on the side as brooms.
