Colorful salad with wheat grains and cheese

Ingredients

  • 125 g Wheat
  • 7-10 Tbsp Salt
  • 1 jar(s) (425 ml/ separation weight: 250 g) ital. white beans
  • 100 g Spring onions
  • 1 (approx. 400 g) large head romaine lettuce
  • 200 g cherry tomatoes
  • 5 TABLESPOONS White wine vinegar
  • 1 TABLESPOON grainy mustard
  • 7-10 Tbsp Pepper
  • 5 TABLESPOONS Germ oil
  • 50 g medieval or old Gouda

Directions

    Soak wheat overnight in 1/2 litre of cold water. Add some salt and cook the wheat in the soaking water, covered, for about 30 minutes. Drain and allow to cool. Drain the beans on a sieve.

    Clean, wash and drain the spring onions and romaine lettuce. Put 2-3 salad leaves aside and cut the rest into strips. Cut spring onions into fine rings. Wash, drain and halve the cherry tomatoes.

    Mix vinegar, mustard, some salt and pepper. Whip the oil into the mixture. Mix the wheat, beans, lettuce, tomatoes and spring onions and the vinaigrette in a large bowl. Place lettuce leaves on a plate and arrange the salad on top.

    Cut the gouda into thin strips and sprinkle on the salad.
