Clean the beetroot, wash and peel it thoroughly. Grate the tubers or cut them into long sticks. Wash and quarter apples and remove the core. Cut them into narrow slices a quarter of the length.
Sprinkle with lemon juice. Clean, wash and cut iceberg lettuce into small slices. Clean and wash the radicchio, drain well and cut into bite-sized pieces. Mix vinegar with some salt, pepper and sugar.
Add oil. Wash the chives and cut into small rolls. Add the rolls to the vinaigrette and season if necessary. Arrange iceberg and radicchio, beetroot sticks and apple slices on 6 plates.
Drizzle the colourful salad with the vinaigrette and serve.
