Ingredients

  • 150 g Whipped cream
  • 200 ml brandy (minimum 40 %)
  • 6 Cloves
  • 1 Cinnamon stick
  • 1 piece(s) untreated lemon + orange peel
  • 800 ml freshly brewed coffee
  • 5-6 Tbsp demerara sugar
  • 7-10 Tbsp grated peel of 1/2 untreated orange

Directions

    Whip the cream until semi-stiff. Heat the brandy, cloves, cinnamon stick and citrus peel in a saucepan. Light with a long match (be careful!), flambé briefly and deglaze with the coffee. Pour everything through a sieve, sweeten to taste and divide into 4 cups. Add cream and sprinkle with orange peel. Serve immediately
