Coconut wafers with exotic compote

Ingredients

Servings: 8
  • 100 g Butter or margarine
  • 115 g Sugar
  • 4 Eggs (size M)
  • 200 g sweetened coconut milk
  • 50 g Coconut flake
  • 2 TEASPOONS Lemon juice
  • 200 g Flour
  • 1 TEASPOON Baking Powder
  • 1 Baby pineapple
  • 1 Kiwi
  • 1 Kaki fruit
  • 1 Mango
  • 2 Oranges
  • 1 TEASPOON Sauce powder "Vanilla flavor
  • 7-10 Tbsp Mint, coconut flakes and chips
  • 7-10 Tbsp Grease

Directions

    Cream fat and 75 g sugar. Stir in eggs bit by bit. Stir in coconut milk, grated coconut, lemon juice, flour and baking powder. Cover the dough and let it rest for about 30 minutes. Peel pineapple and cut into pieces.

    Peel, halve and slice the kiwi. Peel the kaki and cut into slices. Cut mango from the stone, peel and slice. Halve oranges, squeeze juice. Boil up juice and 40 g sugar.

    Mix the sauce powder with a little water until smooth and thicken the orange juice with it, let it cool down. Add fruit to the sauce. Preheat the waffle iron and grease it lightly. Bake about 4 double waffles one after the other until golden brown.

    Then let it cool down on a cake rack. Cut the waffles diagonally in half and arrange on plates with the fruit salad. Decorate with mint, coconut flakes and chips.
