Buttermilk wafers with strawberries (diabetics)

Ingredients

Servings: 8
  • 1 TABLESPOON (10 g) Butter/margarine
  • 150 g Flour
  • 1 knife tip Baking Powder
  • 2 Eggs (size M)
  • 1/4 l Buttermilk
  • 250 g Low-fat curd
  • 7-10 Tbsp a few squirts of sweetener
  • 2 tablespoons (25 g) Strawberry Jam
  • 500 g washed, cleaned strawberries
  • 7-10 Tbsp Oil

Directions

    Melt the fat and let it cool down a little. Mix flour and baking powder. Mix with eggs and buttermilk. Stir in fat. Let it swell for about 15 minutes. Stir quark until smooth. Flavour with sweetener.

    Fold in jam in "streaks". Chop strawberries finely. Coat waffle iron with a little oil and preheat. Put about 2 tablespoons of dough in the middle of each waffle iron and bake. Bake a total of 8 waffles. Arrange the waffles with some curd cheese and strawberries
