Citrus salad with turkey strips

Ingredients

  • 4 medium-sized oranges
  • 2 pink grapefruits
  • 2 TABLESPOONS Walnut kernels
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Sugar
  • 5-6 Tbsp Oil (e.g. walnut oil)
  • 125-150 g Lamb's lettuce
  • 2 small chicory
  • 2 (approx. 300 g) Turkey escalope
  • 1 TABLESPOON clarified butter
  • 7-10 Tbsp Orange

Directions

    Peel oranges and grapefruits so that the white skin is completely removed. Cut out the fillets between the parting skins, collecting the juice

    Chop nuts. Mix 4 tbsp. citrus juice, vinegar, salt, pepper and sugar. Whip the oil into the mixture. Sort, clean and wash the lamb's lettuce. Clean and wash the chicory. Remove the leaves and chop a little smaller.

    Wash the meat, pat dry and cut into strips. Fry in hot clarified butter for 3-4 minutes, turning frequently. Season with salt and pepper, remove

    Carefully mix the prepared salad ingredients and sprinkle with the marinade. Sprinkle with walnuts. Garnish with a slice of orange if desired
