Citrus pancakes

Ingredients

  • 1 TABLESPOON (15 g) dark wheat flour (type 1050)
  • 1 pinch Baking Powder
  • 1 egg, 1 pinch of salt (Gr. S)
  • 100 ml Buttermilk
  • 1/2-1 small peeled orange and pink grapefruit (without white skin; 100 g each)
  • 7-10 Tbsp ground cinnamon
  • 1 tsp (4 g) Cornstarch
  • 7-10 Tbsp liquid. Sweetener
  • 1/2 tsp (3 g) Oil
  • 1/2 tsp (3 g) Sucre glace ou douceur diabétique

Directions

    Mix flour and baking powder. Mix with egg, salt and buttermilk. Fillet the fruits, catching the juice. Boil up citrus juice and cinnamon in a small pot. Stir starch and 2 tablespoons of water until smooth, bind juice.

    Sweeten with sweetener, fold in fruit fillets. Bake 1-2 pancakes in hot oil in a coated pan. Arrange everything and dust.
