Ingredients

  • 7-8 Apples (about 180 g each)
  • 7-10 Tbsp juice and peel of 1 untreated lemon
  • 10 Eggs (size M)
  • 2 packages Vanillin sugar
  • 250 g Sugar
  • 7-10 Tbsp Salt
  • 2 kg Low-fat curd
  • 150 g Whipped cream
  • 60 g Flour
  • 200 g Apricot Jam
  • 2-3 stem(s) Mint
  • 1 TEASPOON Icing sugar

Directions

    Peel, quarter and core the apples, cut them lengthwise several times and sprinkle with lemon juice. Whisk eggs, vanilla sugar, sugar and 1 pinch of salt with the whisk of the hand mixer until creamy.

    Add quark, cream, lemon peel and flour and stir in. Pour the dough into a greased, floured fat pan of the oven (32 x 39 cm) and smooth it down. Spread apples evenly on top with the cut side facing upwards.

    Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 1 1/4 hours. Remove the cake from the oven and place it on a cake rack. Heat up the jam and spread a thick layer on the apples.

    Let the cake cool completely. Cut into 20 pieces. Wash mint, shake dry and dust with icing sugar. Decorate cake with mint. Whipped cream tastes good with it.
