- 400 g Double cream cream cheese
- 7-10 Tbsp Juice of 2 limes
- 4 TABLESPOONS Sugar
- 8 dark chocolate cookies
- 4 TABLESPOONS lemon curd
- 7-10 Tbsp Mint
- 1 Freezer bag

Mix cream cheese, lime juice and sugar. Mash the cookies finely in a freezer bag. Layer cookie crumbs, lemon curd and cream cheese cream in 4 glasses (250 ml each), decorate with mint.
