Wash and slice the tomatoes. Dice the mozzarella. Roll out the dough, cut out 8 rectangles the size of the raclette pans, use the rest of the dough for other purposes. Spread the dough in the pans and prebake under the hot raclette grill for about 5 minutes. Remove, cover with tomatoes and cheese and bake for another 5 minutes. Sprinkle with pepper and garnish with basil
