Beef with spinach and sesame

Ingredients

Servings: 4
  • 400–500 g Water spinach (Asialaden; alternatively leaf spinach)
  • 2 Shallots
  • 2 Garlic cloves
  • 500 g Rump steak
  • 4 TABLESPOONS Oil
  • 1 TEASPOON Cornstarch
  • 3 TABLESPOONS Fish sauce
  • 3 TABLESPOONS Soy sauce
  • 3 TABLESPOONS rice wine (alternatively dry sherry)
  • 2 TABLESPOONS roasted sesame (Asian shop)

Directions

    Clean and wash the spinach and remove the hard stalk ends. Cut the spinach into rough strips. Peel shallots and garlic, dice them finely. Dab the meat dry and remove the fat edge if necessary. Cut meat into thin slices

    Heat 1 tablespoon of oil in a wok or large frying pan. Sauté half the shallots and garlic in it. Add half of the spinach and steam for 2-3 minutes, stirring continuously. Remove. Steam the rest of the spinach in the same way and take it out

    Stir starch and 50 ml water until smooth. Heat 1-2 tablespoons of oil in a wok. Brown the meat in it in two portions on each side for about 30 seconds and put it back into the wok. Add fish sauce, soy sauce and rice wine. Stir in the starch and simmer for about 1 minute. Add spinach, fold in and heat briefly. Sprinkle with sesame seeds. Serve with jasmine rice
