Clean, wash and cut the leek into pieces of about 1 cm. Steam in hot oil for about 3 minutes. Season with salt, pepper and nutmeg. Spread the leek on the fat pan of the oven (39 x 35 cm).
Whisk the cream with eggs and pour over the top. Allow to set in the preheated oven (electric cooker: 200 °C/ gas: level 3) for 10 minutes. In the meantime, quarter the ham and cheese slices. Drain pineapple slices and cut in half.
Toast and dice the slices of bread. Spread ham, pineapple and bread cubes on the leek and cover with cheese. Bake for another 20-30 minutes. Makes 12 pieces.
