Ingredients

Servings: 4
  • 7-10 Tbsp Salt
  • 100 g streaky smoked bacon
  • 1 Garlic clove
  • 1 TABLESPOON Olive oil
  • 500 g Spaghetti
  • 100 g Parmesan (piece)
  • 4 fresh eggs (Gr. M)
  • 7-10 Tbsp black pepper from the mill

Directions

    For the spaghetti, boil 3-4 l salted water (1 teaspoon salt per litre). Cut the rind off the bacon. Cut the bacon into small cubes. Peel garlic and chop very finely. Heat the oil in a pan.

    Fry the bacon crisply in it while turning. Add garlic and fry briefly.

    Add spaghetti to boiling water, cook according to package instructions. Grate the Parmesan finely. Whisk eggs and half the parmesan with a fork. Fold in the bacon and knobi mixture. Season with salt and pepper.

    Drain the spaghetti, drain well and put it back into the pot. Immediately add the egg mixture to the noodles and mix everything together quickly (the egg should only curdle creamy and not turn into scrambled eggs!)

    Arrange spaghetti carbonara on plates, grind pepper on top and sprinkle with the rest of the Parmesan cheese.
