Ingredients

  • 90 g Sugar
  • 2 Eggs
  • 2 Egg Yolk
  • 1/4 l boiled coffee (let it cool down)
  • 2-3 TABLESPOONS Rum
  • 250 g Whipped cream
  • 100 ml Milk
  • 7-10 Tbsp Cocoa

Directions

    Beat 70 g sugar, eggs and egg yolks and coffee in a hot water bath until foamy. Then beat again until cold. Season to taste with rum. Whip cream until stiff and fold in carefully. Fill the mixture into capuccino cups and freeze.

    Shortly before serving, whisk milk and remaining sugar until frothy. Add to the parfait. Serve dusted with cocoa. Serve with fresh fruit and pastry.
