Clean broccoli and cauliflower, wash and divide into small florets. Bring a pot of salted water to the boil. Blanch the broccoli and cauliflower florets for about 5 minutes. Rinse with cold water and drain on a sieve.
Clean, wash and cut the radishes into small cubes. Peel and finely dice the onion. Wash parsley and chives and dab dry. Chop parsley finely. Cut chives into small rolls.
Season vinegar with salt and pepper. Whip the oil into it. Stir in radishes and onions. Mix marinade with broccoli and cauliflower and let it soak through. Cut ham into strips. Add to broccoli and cauliflower salad and fold in.
Season with salt and pepper if necessary. Serve with a hearty farmhouse bread.
