Clean and wash the vegetables. Peppers and spring onions in narrow rings, cut carrots into slices. Mix vinegar, 2 tablespoons water, salt and pepper. Beat 2 tablespoons of oil into it. Mix marinade and prepared vegetables. Wash the meat and dab dry.
Heat the remaining oil in a coated pan. Fry the steaks on each side over a high heat for 3-4 minutes. Season with salt and pepper. Arrange steaks, raw vegetables and quark. Sprinkle with cress as desired
