Ingredients

  • 2 Onions
  • 1 red chilli pepper
  • 3-4 Tbsp Olive oil
  • 75 g demerara sugar
  • 100 ml strong coffee
  • 3-4 Tbsp Whiskey
  • 5-6 Tbsp white balsamic vinegar
  • 400 g Tomato ketchup
  • 7-10 Tbsp Smoke salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp a few drops of Tabasco

Directions

    For the sauce, peel and finely dice the onions. Clean, wash and slice the chilli pepper lengthwise and remove the seeds. Chop the pod finely. Heat olive oil in a pot, sauté onions, add sugar, let caramelize briefly

    Add coffee, whiskey, vinegar and ketchup. Season with smoked salt, pepper and Tabasco. Bring to the boil and simmer for about 15 minutes at medium heat. Stir several times
