Banana crêpes with chocolate sauce

Ingredients

  • 2 Eggs (Gr. M)
  • 1/4 l + 1/4 l milk
  • 4-5 Tbsp Sugar
  • 7-10 Tbsp Salt
  • 100 g Flour
  • 2-3 TABLESPOONS Sparkling mineral water
  • 1 package sauce powder "chocolate"
  • 250 g Edible quark (20 % fat in dry matter)
  • 1 package Vanillin sugar
  • 1 large banana
  • 1-2 TABLESPOONS Lemon juice
  • 2 TABLESPOONS butter/margarine

Directions

    Mix eggs, 1/4 l milk, 1 tablespoon sugar, 1 pinch of salt and flour to a smooth dough. Let it swell for 10-15 minutes. Then stir in mineral water

    Pour 1/4 l of milk into a high mixing bowl. Stir in sauce powder. Whisk vigorously for about 1 minute. Mix quark with vanillin sugar and 2 tablespoons sugar. Peel banana, cut into thin slices and sprinkle with lemon juice. Stir into the quark

    Heat the fat in portions in a small coated pan (approx. 16 cm Ø). Bake 8 thin crêpes from the dough one after the other. Keep warm if necessary. Spread the crêpes with banana quark and fold them in. Serve with chocolate sauce
