Asparagus Pasta

Ingredients

  • 40 g Pine nuts
  • 500 g green asparagus
  • 250 g cherry tomatoes
  • 4 Stem(s) Basil
  • 100 g Parma ham
  • 400 g ribbon noodles
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 50 g Parmesan cheese

Directions

    Roast the pine nuts in a pan without fat for about 4 minutes, remove. Wash asparagus, cut off woody ends. Cut asparagus into slices. Wash, clean and halve cherry tomatoes.

    Wash the basil, shake dry and cut into strips, except for a little to garnish. Cut the ham into strips. Prepare pasta in boiling salted water according to package instructions. In the meantime heat oil in a pan.

    Fry the ham for about 2 minutes and take it out. Fry the asparagus in hot fat for about 5 minutes while turning. After 3 minutes add tomatoes and fry them. Season with salt and pepper. Drain the pasta water.

    Add the vegetables, ham, pine nuts and basil to the pasta. Arrange on plates. Finely slice the parmesan and spread on the pasta. Garnish with basil.
