Dice the matie very finely. Peel and finely dice the onion. Cut the gherkin into small cubes as well. Drain capers
Wash the apple, quarter it and cut out the core. Dice the apple quarters and sprinkle them with lemon juice to prevent them from browning
Clean, wash, dry and pluck the lettuce leaves. Mix the matie, onion, cucumber and apple cubes. Season with pepper
Arrange the salad leaves on 4 plates. Arrange the matie tartar on top. Sprinkle with pepper if necessary. Garnish as you like with a slice of apple and some parsley. Serve with dark wholemeal or farmhouse bread
