Ingredients

Servings: 6
  • 800 g mixed berries (fresh or frozen)
  • 6 Egg yolk (size M)
  • 80 g Sugar
  • 150 ml dry white wine
  • 80 ml Lemon liqueur
  • 2 TABLESPOONS demerara sugar

Directions

    Berries may be washed, sorted and drained or frozen fruit may be thawed and drained for about 20 minutes. Spread the fruit in an ovenproof dish

    In a bowl, beat the egg yolks, sugar and white wine. Then continue beating over a bain-marie until the volume has tripled

    Remove the bowl from the water bath and embezzle the liqueur. Then pour the zabaglione over the fruit. Sprinkle with brown sugar and bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 10 minutes until a light golden crust is formed. Serve immediately
