Yoghurt dressing with ginger, coriander and lime

Ingredients

  • 30 g Ginger Tuber
  • 1 Lime
  • 1/2 bunch Coriander
  • 150 g Whole milk yoghurt
  • 100 g Buttermilk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    Peel and chop the ginger. Squeeze lime. Wash coriander, dab dry and chop finely. Put yoghurt and buttermilk in a tall cup and mix. Add ginger, lime juice and coriander and puree finely.

    Season to taste with salt, pepper and sugar. Pour the dressing into a bottle and place in the refrigerator. Dressing tastes great with fresh salads with seafood and fish or as a dip with Asian rice dishes. Dressing has a shelf life of approx. 1 week
