Ingredients

  • 100 g Honey
  • 30 g Butter
  • 50 g demerara sugar
  • 1 pinch Salt
  • 1 egg (size M)
  • 250 g Flour
  • 1 TABLESPOON Cocoa powder
  • 1 TEASPOON Baking Powder
  • 2 TEASPOONS Gingerbread spice
  • 150 g Icing sugar
  • 1 Protein (size S)
  • 7-10 Tbsp red food colouring
  • 100 g Fondant
  • 7-10 Tbsp sugar pearls
  • 7-10 Tbsp Sugar hearts
  • 7-10 Tbsp purple candied violets and mint
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Cling film
  • baking paper
  • 7-10 Tbsp Spray or freezer bag

Directions

    For the dough, put honey, butter, brown sugar and salt in a saucepan and heat over medium heat while stirring until the sugar is dissolved and the ingredients have combined into a mass. Pour the mixture into a mixing bowl and let it cool down. Stir the egg into the honey mixture. Mix flour, cocoa, baking powder and gingerbread spice, sieve into the mixing bowl and knead into the honey mass with the dough hooks of the hand mixer. Wrap the dough in foil and refrigerate for at least 2 hours

    Create 3 templates for gable sides, roof and side walls. Side walls: 10 x 6.5 cm, roof panels: 10 x 12 cm, gable sides: 9 x 6.5 x 6 cm. Roll out the dough on a floured work surface to a thickness of approx. 4 mm. Place templates on top and cut out. Knead dough remains, roll out again and cut out remaining parts of the house. Cut out a door (3 x 4 cm) with a rounding in the front of the house and make the door smaller (3.5 x 2 cm). Place the dough sheets on a lined sheet and use a ruler to slightly press in lines at equal intervals (wooden plank look). Place pieces of dough on a baking tray lined with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 12 minutes

    Sieve the icing sugar into a bowl. Add the egg whites and mix to a thick glaze. Pour the icing, up to 2 tablespoons, into a piping bag with a small perforated spout or into a freezer bag and cut off a small corner. First glue the house frame together and let it dry for about 20 minutes, then fix the two roof panels with the icing and let it dry. Put them on a cake plate. Fasten the door to the house with icing

    Colour 2 tablespoons of icing pink, place in a freezer bag and cut off a small corner. Border the door with it, paint windows on the walls. Divide fondant into 3 parts and colour in three different shades of red. Roll out and cut out different flowers, press beads in the middle or put two flowers on top of each other and then press a bead in the middle. Spray the rest of the icing on the edges of the house front and decorate with flowers and hearts. Dust the roof with icing sugar and decorate with mint. Arrange mint leaves and flowers beside the house
