Clean and wash the radicchio, pluck into bite-sized pieces and drain. Clean, wash and drain lamb's lettuce. Peel 2 oranges so that the white skin is completely removed.
Cut oranges into slices. Halve the remaining orange and squeeze the juice. Mix orange juice and vinegar, season with salt, pepper and sugar. Whip the oil into it. Arrange radicchio, lamb's lettuce, orange slices and goose breast on four plates, sprinkle with pepper and sultanas.
Drizzle marinade over it. Serve garnished with orange slice and orange peel spiral.
