Wholemeal noodles with meatballs

Ingredients

  • 1 Onion
  • 1 small zucchini
  • 150 g Broccoli
  • 2 TEASPOONS Oil
  • 250 g strained tomatoes
  • 3-4 Stem(s) Parsley
  • 1 TABLESPOON Breadcrumbs
  • 150 g Beefsteak minced meat
  • 1 TEASPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g Wholemeal pasta (e.g. penne)
  • 7-10 Tbsp Sugar

Directions

    Peel and finely chop the onion. Wash and clean the zucchini, halve lengthwise and cut into slices. Clean and wash the broccoli and cut into florets. Heat 1 tsp. oil in a pot. Fry half of the onion cubes in it while turning until transparent. Add tomatoes, cover and simmer for about 15 minutes. Wash parsley, shake dry, remove leaves and chop

    Knead remaining onion, breadcrumbs, minced meat, mustard and parsley, season with salt and pepper. Form 4 small balls from the mixture with wet hands. Heat 1 tsp. oil in a frying pan. Fry the meatballs for about 5 minutes while turning them over. Add broccoli and zucchini, cover and fry over low heat for about 5 minutes. Season vegetables with salt and pepper

    Meanwhile, prepare the pasta in boiling salted water according to the instructions on the packet. Season the sauce with salt, pepper and a little sugar. Drain the noodles and arrange on plates with the sauce, meat and vegetables
