White beans with fried egg

Ingredients

  • 2 Onions
  • 2 Garlic cloves
  • 3 can(s) (425 ml each; 250 g by weight) thick Italian white beans
  • 4 Tomatoes
  • 3 TABLESPOONS Oil
  • 175 ml Vegetable broth (instant)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 8 discs (10 g each) Bacon
  • 4 Eggs
  • 1/2 package (12.5 g) frozen parsley
  • 7-10 Tbsp Parsley

Directions

    Peel the onions. Chop one onion roughly, cut the rest of the onion into slices. Peel garlic and chop finely. Drain the beans on a sieve. Wash, clean and slice the tomatoes.

    Heat 2 tablespoons of oil in a pan. Add diced onion and fry until transparent. Add beans, tomatoes and garlic and fry for about 4 minutes, turning. Deglaze with stock and let simmer for about 7 minutes at medium heat while stirring. Season with salt and pepper. Heat the remaining oil in a large frying pan. Fry bacon and onion rings in it until crispy brown. Remove from the pan and keep warm. Beat the eggs one after the other, slide them into the pan and fry them as fried eggs.
