Wheat seedling salad with yoghurt sauce (diabetics)

Ingredients

Servings: 4
  • 300 g cleaned celery
  • 125 g cleaned lamb's lettuce
  • 100 g Wheat seedlings
  • 275 g peeled and cleaned pineapple
  • 75 g Turkey breast cold cuts
  • 250 g Whole milk yoghurt
  • 1 Splash of liquid sweetener
  • 3 TABLESPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper

Directions

    Wash the celery and cut into slices. Wash and drain the lamb's lettuce. Wash and drain the sprouts. Cut pineapple into thin slices. Halve turkey breast slices.

    Mix salad ingredients and arrange in a bowl. Mix yoghurt, sweetener and lemon juice. Season with salt and pepper. Pour over the salad and serve immediately
