Warm roast beef and fig sandwich

Ingredients

  • 2 Baguette sticks (e.g. whole grain)
  • 200 g creamy goat's cheese roll
  • 6 Tl liquid honey
  • 75 g Arugula
  • 6 ripe figs
  • 12 discs Roast beef cold cuts (approx. 15 g each)
  • 7-10 Tbsp coarse pepper
  • baking paper

Directions

    Preheat oven (electric cooker: 200°C/circulating air: 175°C/gas: see manufacturer). Line a baking tray with baking paper. Cut baguettes in half crosswise, then cut them open lengthwise and lay them on the baking tray.

    Crumble the goat's cheese and sprinkle about 2/3 on the lower baguette halves. Drizzle 1 tsp. honey over each. Bake in a hot oven for 8-10 minutes.

    In the meantime clean, wash and drain the rocket. Wash the figs, dab dry and remove the stalks. Cut the figs into slices.

    Take out the baguettes. Cover the lower halves with rocket, roast beef and figs. Sprinkle with honey, pepper and the rest of the goat cheese. Place the upper halves on top.
