Wash the meat, dab dry and dice. Peel ginger and grate finely. Mix meat with ginger and 1⁄2 tsp. coriander and rose paprika. Wash and chop the tomatoes. Peel onion and chop roughly.
For the guacamole, peel and finely chop the garlic. Cut the avocado in half lengthwise and remove the core. Remove the flesh from the skin with a spoon and crush with a fork. Mix with garlic and lime juice.
Season to taste with salt and pepper.
Heat the oil in a frying pan. Fry the meat for about 8 minutes. After about 5 minutes add onion cubes. Season meat with salt. Finally fold in tomatoes and fry for 1-2 minutes.
In the meantime, toast the bread in portions in the toaster for about 3 minutes. Fill the breads with meat and guacamole (either cut the breads open or fold them up).
