Ingredients

  • 125 g Flour
  • 100 g ground walnuts
  • 60 g Sugar
  • 1 Egg Yolk
  • 7-10 Tbsp grated rind of
  • 1/2 untreated orange
  • 1 pinch Salt
  • 80 g Butter or margarine
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Cling film
  • baking paper
  • 1 Protein
  • 40 g Sugar
  • 100 g chopped walnuts
  • 50 g Rum Raisins
  • 1 Egg Yolk
  • 1 TABLESPOON Whipped cream
  • 2 TABLESPOONS Icing sugar
  • 2-3 TABLESPOONS Apricot Jam
  • 30 Walnut halves

Directions

    Mix flour, walnuts, sugar, egg yolk, orange peel, salt and cool fat in flakes to a smooth short pastry. Wrap in cling film and refrigerate for approx. 1 hour. Roll out to a thickness of approx. 2 mm on a floured work surface.

    Cut out circles (6 cm Ø). Mix egg white, sugar, walnuts and raisins. Place 1 teaspoon of filling on each of the dough circles. Press all around so high that small "hats" are formed.

    Whisk the egg yolk and cream and spread the biscuits with it. Bake on a baking tray lined with baking paper in a preheated oven (electric cooker: 200 °C/ gas: level 3) for approx. 15 minutes. Remove the biscuits and let them cool down on a cake rack.

    Then dust with icing sugar. Warm the jam in a small pot. Dip the walnut halves into it, place them on the cones and press them lightly. Results in about 30 pieces.
