Ingredients

  • 2 Eggs (size M)
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 100 g Flour
  • 1 heaped Tsp baking powder
  • 10 sheets Gelatine
  • 500 g Whole milk yoghurt
  • 5 TABLESPOONS Vodka
  • 75 ml bitter lemon
  • 125 g Sugar
  • 5 TABLESPOONS Lime juice
  • 7-10 Tbsp grated peel of 1 lime
  • 250 g Whipped cream
  • 2 Limes
  • 4 TABLESPOONS Sugar syrup
  • 7-10 Tbsp green sugar
  • baking paper

Directions

    Separate eggs. Beat the egg whites and 2 tablespoons of cold water until stiff, adding sugar and vanillin sugar. Stir in the egg yolks one after the other. Sift flour and baking powder over it and fold in carefully. Line the bottom of a springform pan (26 cm Ø) with baking paper. Fill in sponge cake mixture and smooth it down.

    Bake in the preheated oven (electric cooker: 200 °C/ convection oven: not suitable/ gas: level 3) for 15-20 minutes. Remove, loosen the base from the tin and pull off the baking paper. Let the base cool down. Soak gelatine in cold water. Mix yoghurt, vodka, bitter lemon, sugar, lime juice and zest. Squeeze out the gelatine, dissolve and stir in 3 tablespoons of yoghurt. Stir into the remaining yoghurt mass. Cool until the mass begins to gel. Whip cream until stiff and stir into the cream. Place the rim of the springform pan around the cake base. Pour in the yoghurt mass, smooth it down and put it in a cool place for 3-4 hours.

Heat up the sugar syrup and let the lime slices steep briefly in it. Take them out and let them drain. Remove the rim of the springform pan. Sprinkle the cake rim with green sugar. Cover cake with lime slices
