Peel, wash and dice the potatoes. Dice bacon finely and fry until crisp in a pan. Remove the diced bacon from the pan and set aside. Heat oil in bacon fat and fry potatoes for 12-15 minutes at medium heat until golden brown. Clean and wash the peppers and spring onions. Cut pepper into strips and spring onions into rings.
Add the vegetables to the pan 5 minutes before the end of the cooking time and fry. Add bacon cubes to the pan and season ingredients with salt and pepper. Whisk the eggs and milk, pour into the pan and let it simmer at low heat. Loosen farmer's breakfast at the edge of the pan and fold it half over. Serve farmer's breakfast garnished with gherkins and parsley
