Peel, halve and core apples. Cut the fruit flesh into pieces. Put apple pieces, sugar, 75 ml water and lemon juice in a pot and bring to the boil. Steam apple pieces at low heat for about 10 minutes while stirring occasionally until soft, but do not let them disintegrate. Let cool off
Stir the quark, yoghurt and icing sugar until smooth. Break the pumpernickel into small pieces. Layer pumpernickel, apple compote and quark mixture in glasses one after the other. Before serving, decorate each glass with 1 tbsp. currant jelly
