Vanilla pudding with strawberry sauce

Ingredients

  • 80 g Cornstarch
  • 6 Egg yolk (size M)
  • 160 g Sugar
  • 1 l Milk
  • 1 Vanilla pod
  • 1 package (300 g) frozen strawberries
  • 1-2 TEASPOONS Honey
  • 1 TABLESPOON Lime or lemon juice

Directions

    Mix starch, egg yolks, 80 g sugar and 1/2 litre milk. Cut the vanilla pod in half lengthwise and scrape out the pulp. Boil 500 ml milk, 80 g sugar, vanilla pod and pulp. Remove the pod from the milk, dab dry and set aside. Stir the starch mixture into the milk with a whisk and bring to the boil again, stirring constantly, until a smooth, thick mass is formed. Rinse a ring cake mould (approx. 1 litre capacity) with cold water. Add the mixture, let it cool down a little and put it in a cool place for 3-4 hours. Bring the strawberries briefly to the boil, puree and season to taste with honey and lime juice. To turn the pudding upside down, place it briefly in warm water up to the edge of the mould. Turn out the pudding onto a suitable plate. Decorate with vanilla pod. Add strawberry sauce
