Bring 1/2 litre of milk and water with vanilla sugar to the boil and cook the noodles for about 12 minutes. Peel, halve and core the pears and cut them into slices. Steam in apple juice with sugar for about 5 minutes. Boil up the rest of the milk and melt the nut nougat cream in it. Halve 6 hazelnuts, chop the rest roughly.
Drain the pasta and pears and arrange on plates. Pour some sauce over them and sprinkle with hazelnuts. Sprinkle pears with cinnamon. Decorate everything with balm leaves. Serve the rest of the sauce
