Bring plenty of water with salt and oil to the boil, add pasta, stir once and cook for 10-12 minutes. In the meantime, peel onion and garlic and dice finely. Clean and wash the celery and carrots and also dice them finely. Heat the fat in a pan and sauté the onion and garlic. Add minced meat and fry well.
Add tomatoes with juice, tomato paste, bay leaf, celery and carrots. Let everything cook for 5-10 minutes. Add herbs and season with salt and pepper. Drain the pasta and rinse briefly under warm water if desired. Arrange the noodles on a plate with the meat sauce and garnish with parsley
