Wash and drain the lemon leaves. Line a bamboo steamer pot with it. Put Dim sum on it and cover. Put the steamer in a pot filled with a little water. Bring to the boil and cook at medium heat in steam for 7-10 minutes according to the instructions on the packet.
Finely dice the pineapple for the dip. Wash the chillies, cut them in half lengthwise and remove the seeds. Cut into rings. Mix the pineapple and chilli with the sauce. Serve with the dim sum
