Turkey rolls with leaf spinach

  • 1 Spring onion (30 g)
  • 60 g Mango
  • 1 (approx. 150 g) Turkey escalope
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 tsp (5 g) Mustard
  • 1 tsp (5 g) Olive oil
  • 1 (30 g) small onion
  • 200 g young leaf spinach
  • 1 tablespoon (10 ml) Vegetable broth (instant)
  • 7-10 Tbsp freshly grated nutmeg
  • 7-10 Tbsp Asia Chives
  • 3 wooden skewers

Directions

    Clean, wash and slice the spring onion. Peel the mango and cut into strips. Wash the meat, dab dry and season with salt and pepper. Spread with mustard, spread mango and spring onion on top and roll up.

    Fix with 3 wooden skewers and cut through 2 times. Heat the oil and fry the meat for about 6 minutes while turning. Meanwhile peel onion and cut into fine cubes. Wash and sort the spinach. Heat the broth, add the onion and stew for about 5 minutes.

    After 2 minutes add the spinach and season with salt, pepper and nutmeg. Arrange spinach and turkey rolls on plates. Garnish with chives.
