Clean the red cabbage, quarter it and remove the stalk. Cut the cabbage into fine strips. Peel shallots and possibly halve them. Wash the apples. 1 apple four
Fry with shallots and cabbage in clarified butter. Add 1/8 litre water and vinegar. Season with salt, cloves and sugar and braise for about 1 hour. Wash turkey legs and pat dry. Rub with salt, pepper and paprika.
Place on the cold-rinsed fat pan of the oven and bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 45-55 minutes. Quarter the remaining apple, remove seeds, cut into pieces and fold into the cabbage shortly before the end of the cooking time.
