Ingredients

  • 1.2 kg Turkey Breast
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5 discs (75 g each) frozen puff pastry
  • 500 g Mushrooms
  • 2 Onions
  • 1 collar Parsley
  • 1 TABLESPOON Oil
  • 4 TABLESPOONS grated parmesan cheese
  • 800 g Potatoes
  • 250 g Whipped cream
  • 1 Egg Yolk
  • 1 kg Broccoli
  • 1-2 TABLESPOONS Butter
  • 3 TABLESPOONS flaked almonds
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Kitchen yarn

Directions

    Wash the turkey breast, dab dry and bind into shape. Season with salt and pepper and bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 50 minutes.

    Then let it rest for about 15 minutes, remove kitchen yarn. In the meantime, place the puff pastry slices next to each other and let them thaw. Clean, clean and chop the mushrooms finely. Peel and finely chop the onions.

    Wash and chop the parsley. Heat the oil and fry the onions and mushrooms for about 5 minutes. Season with salt and pepper, let cool down. Stir in parsley and 2 tablespoons of parmesan. For the gratin peel, wash and finely slice the potatoes.

    Spread flat in 4 ramekins. Season with salt and pepper. Sprinkle with 2 tablespoons of parmesan and drizzle cream over it. Cook in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-40 minutes.

    Place 4 slices of dough on top of each other and roll out on a lightly floured work surface to form a plate measuring approx. 30 x 40 cm. Cut off 6 strips on the short side for garnishing. Roll out the rest of the plate thinly, cut out stars for garnishing.

    Place stars on a baking tray lined with baking paper. Whisk the egg yolks. Spread the stars with it. Bake for 4-5 minutes in a preheated oven (electric range: 225 °C/ convection oven: 200 °C/ gas: level 4).

    Spread the mushroom mixture on the lower half of the pastry. Place turkey breast on top and wrap in the dough. Spread with whisked egg yolk, decorate with strips of pastry, also spread. In the preheated

    In the meantime clean and wash the broccoli and cut it into small florets. Cook in boiling salted water for about 8 minutes, drain. Melt butter. Toss the almond flakes and broccoli in it. Garnish roast and vegetables with puff pastry stars.
