Turbo pasta with broccoli pesto

Ingredients

Servings: 4
  • 7-10 Tbsp salt, pepper
  • 500 g Broccoli
  • 500 g short pasta (e.g. penne rigate)
  • 100 g Bacon
  • 5 TABLESPOONS Olive oil
  • 50 g chopped almonds
  • 1 Garlic clove
  • 1 collar Basil
  • 50 g Parmesan (piece)

Directions

    Bring 4-5 l salt water (1 teaspoon salt per litre) to the boil. Clean and wash the broccoli and divide into florets. Cook in boiling salt water for about 4 minutes. Quench, drain.

    Cook the pasta in boiling salted water according to the instructions on the packet. Halve the bacon and fry until crispy in 1 tbsp. oil, remove. Roast the almonds in the bacon fat.

    Grate cheese. Peel and chop the garlic. Wash basil, pluck leaves. 1⁄3 Mash broccoli, almonds with frying fat, cheese, garlic and 4 tbsp. oil. Season with salt and pepper. Add the rest of the broccoli briefly to the pasta and warm it up. Drain and put back into the pot. Mix in pesto and bacon.
