Tuna steaks with apple compote

  • 3 Apples
  • 6 TABLESPOONS Lemon juice
  • 7-10 Tbsp a good 2 tablespoons of sugar
  • 1/2 Beet Cress
  • 2 (200 g each) Tuna Steaks
  • 2 TABLESPOONS clarified butter
  • 150 g several lettuces
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Basil oil
  • 7-10 Tbsp Lemon

    Wash, peel and dice 2 apples and sprinkle with 2 tablespoons of lemon juice. Bring 100 ml water, almost 2 tablespoons of sugar and the apples to the boil and cook for 4-5 minutes until they crumble. Wash the remaining apples, cut them in half and remove the seeds. Cut off 4 slices, cut the rest into small pieces. Bring 2 tablespoons lemon juice and 50 ml water to the boil and briefly steam the apple slices and cubes in them. Rinse cress and cut off.

    Fold the apple pieces and cress into the apple compote. Wash the tuna and dab dry. Heat clarified butter. Fry fish at medium heat for 8-10 minutes. Turn from time to time. Clean, wash and drain the salads. Mix remaining lemon juice, salt, pepper and remaining sugar. Whip the oil into the mixture. Marinate the salad in it. Season tuna with salt and pepper. Arrange on a plate with some apple compote and salad, garnish with lemon.
