Wash and peel the cucumber so that alternately one strip is peeled and one is unpeeled. Halve the cucumber, cut one half into finger-thick sticks and grate the other roughly. Peel the garlic and put it through the garlic press.
Wash parsley, dab dry, pluck leaves from the stalks and chop leaves finely. Put approx. 1 teaspoon of grated cucumber aside. Mix yoghurt, garlic, grated cucumber and parsley, except for some garnish.
Season to taste with salt and pepper. Wash the carrots and peel them so that some green remains. Peel, wash and cut the kohlrabi into finger-thick sticks. Arrange the vegetable sticks on a plate.
Arrange tzatziki in a bowl. Sprinkle with grated cucumber and parsley. Small salt crackers taste good with it.
