12 Line the troughs of a muffin tin with paper baking cups. Mix flour, baking powder, grated coconut, up to approx. 1 tablespoon, and sugar in a bowl. Whisk egg, milk, coconut liqueur and oil. Add the flour mixture, stir briefly. Spread the mixture into the bowls and sprinkle with the remaining grated coconut. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-25 minutes (test with sticks!).
Remove the muffins and let them cool down. Roast the coconut chips in a pan without fat, remove. Wash lime hot, grate dry and tear off the skin in zests. Halve the lime and squeeze it. Mix icing sugar and 1-2 tablespoons lime juice to a thick glaze. Take the muffins out of the mould, spread the icing on them, let them dry a little, decorate them with coconut chips and lime zests and let them dry
